Let’s Get Cooking Fajitas and Lemon & Raspberry Muffins

With summer on its way, our recipes matched the mood of sunny and light.

Over to our star cooks from last week, Anna and Rowan, to tell us about the dishes the group made.

"We made Fajitas. We started off by cutting all the vegetables which were: peppers, chilli, lettuce, red onion, garlic, mushrooms and tomatoes. Next, we pan fried all of these (it looked like a rainbow). After that, we put all the vegetables in the tortilla wraps with some soured cream and lettuce on the side.  When we were done, all of us got to try some.  I didn't really like it but my mum, dad and brother REALLY liked it.  Fun fact….Did you know that Fajitas come Mexico?  Mexicans love spicy food.  You can also try guacamole instead of soured cream and add some chopped cherry tomatoes or finely sliced strips of cucumber, with the lettuce, to increase the number of vegetable portions."  by Anna

"With Mrs.Halliwell’s group we made lemon and raspberry muffins.  First, we made the dry mixture: flour, bicarbonate of soda, sugar and cinnamon then we mixed it together. Next, we made the wet mixture: vanilla extract, whisked eggs, oil, yogurt, lemon juice and zest.  After that, we stirred both mixtures together and gently folded in the raspberries to make sure they didn’t get squashed.  Finally, we put some of the mixture in each case and put the tray in the oven.  I thought the muffins were delicious because raspberry and lemon goes together really well and they were not dense at all. My sister, Elodie, was my chief taster and she said they were spongy, sweet and fruity."  by Rowan
